  • 1 lb chicken thighs (bone-in)
  • 2 cups okra (fresh or frozen)
  • 1 cup bell peppers (diced)
  • 1 cup yellow onion (diced)
  • 1 cup celery (diced)
  • 4 cups chicken broth
  • Cajun seasoning (to taste)

Instructions

  1. In a large pot over medium heat, brown sliced Andouille sausage for about 5 minutes; remove and set aside.
  2. In the same pot, brown seasoned chicken thighs for about 8-10 minutes. Add diced onions, bell peppers, celery, and okra; sauté until softened.
  3. Pour in the chicken broth and stir well while scraping up any browned bits from the bottom.
  4. Add Cajun seasoning and bay leaves; bring to a boil then reduce heat to simmer uncovered for 30-40 minutes.
  5. If desired, thicken with file powder before serving over cooked rice. Garnish with chopped green onions or parsley.
