  • 2 tbsp Cajun seasoning
  • 8 oz pasta (fusilli or penne)
  • 1 red bell pepper, diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup BBQ sauce (sweet and smoky)
  • ½ cup heavy cream
  • 2 tbsp olive oil (extra virgin recommended)
  • ½ cup freshly grated Parmesan cheese

Instructions

  1. Prep all ingredients: chop chicken into bite-sized pieces and dice onion and bell pepper.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken seasoned with Cajun seasoning; cook until golden brown and cooked through (about 6-8 minutes).
  3. Add diced onion and bell pepper to the skillet; sauté until soft (about 3-5 minutes).
