Ingredients

  • 8 ounces rotini pasta
  • 1 packet taco seasoning
  • 1 can (14.5 ounces) diced fire-roasted tomatoes
  • 1 cup shredded sharp cheddar cheese
  • 1 bell pepper, diced (red or yellow)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup low-sodium broth or water
  • sour cream for serving (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente (8-10 minutes), then drain.
  2. In a large skillet over medium heat, sauté onions and bell peppers in olive oil until soft (about 5 minutes).
  3. Add ground beef to the skillet, browning it while breaking it apart (6-8 minutes). Stir in taco seasoning.
  4. Mix in diced tomatoes with juices and broth; simmer for 5 minutes.
  5. Fold in cooked pasta and shredded cheese until well combined (about 3 minutes).
  6. Serve with a dollop of sour cream if desired.
