- 8 ounces rotini pasta
- 1 packet taco seasoning
- 1 can (14.5 ounces) diced fire-roasted tomatoes
- 1 cup shredded sharp cheddar cheese
- 1 bell pepper, diced (red or yellow)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup low-sodium broth or water
- sour cream for serving (optional)
Instructions
- Cook pasta in salted boiling water until al dente (8-10 minutes), then drain.
- In a large skillet over medium heat, sauté onions and bell peppers in olive oil until soft (about 5 minutes).
- Add ground beef to the skillet, browning it while breaking it apart (6-8 minutes). Stir in taco seasoning.
- Mix in diced tomatoes with juices and broth; simmer for 5 minutes.
- Fold in cooked pasta and shredded cheese until well combined (about 3 minutes).
- Serve with a dollop of sour cream if desired.
