Instructions
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds.
- In a skillet over medium heat, cook chicken breasts for about 6-8 minutes per side until no longer pink; shred once cooked.
- In a bowl, mix shredded chicken with buffalo sauce and cream cheese until well combined.
- Stuff each pepper with the chicken mixture and top with shredded cheese.
- Place stuffed peppers in a baking dish with a splash of water at the bottom, cover with foil, and bake for 25 minutes. Remove foil and bake an additional 10 minutes until bubbly.
