  • 1 package (12 oz) frozen potstickers
  • 8 oz fresh shiitake or cremini mushrooms, sliced
  • 2 cups baby bok choy, chopped
  • 4 cups low-sodium vegetable broth
  • 1 inch fresh ginger, grated
  • 4 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 2 green onions, finely chopped

Instructions

  1. Prepare all ingredients by chopping garlic and ginger, and cleaning mushrooms.
  2. In a large pot over medium heat, drizzle with oil and sauté garlic and ginger until fragrant (about 2 minutes).
  3. Pour in vegetable broth and bring to a gentle boil. Add frozen potstickers carefully.
  4. After about 5 minutes, add sliced mushrooms and chopped bok choy. Simmer until bok choy wilts but remains bright green.
  5. Stir in soy sauce. Taste-test and adjust seasoning if needed.
  6. Serve hot in bowls, garnished with chopped green onions.
