Ingredients
- Salmon fillets
- Fresh cranberries
- Fresh orange juice
- Honey
- Low-sodium soy sauce
- Garlic cloves
- Olive oil

Instructions
- Preheat oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
- In a saucepan over medium heat, combine cranberries, orange juice, honey, soy sauce, minced garlic, salt, and pepper. Stir until cranberries begin to pop.
- Place salmon fillets skin-side down in the greased baking dish. Season with salt and pepper, then spoon half of the glaze over each fillet.
- Bake for 15-20 minutes or until the salmon flakes easily and reaches an internal temperature of 145°F (63°C).
- In the last few minutes of baking, drizzle remaining glaze over the fillets for added caramelization.
- Let rest for 5 minutes before serving.
