  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 cup aged Asiago cheese, shredded
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried oregano
  • 2 tbsp lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C). Pat chicken dry with paper towels.
  2. In a large skillet over medium-high heat, heat olive oil. Season chicken with salt and pepper and sear until golden brown on both sides (6-7 minutes per side). Remove chicken and set aside.
  3. In the same skillet, reduce heat to medium and sauté minced garlic until fragrant (about 30 seconds).
  4. Pour in heavy cream and chicken broth; simmer gently before adding shredded Asiago cheese. Stir until melted and smooth.
  5. Add fresh spinach, oregano, and lemon juice; stir until spinach wilts.
  6. Return seared chicken to the skillet, spooning sauce over each piece. Bake for 20-25 minutes until cooked through.
