- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup oil-packed sun-dried tomatoes, chopped
- 1 cup fresh basil leaves, chopped
- 8 oz cream cheese, softened
- 8 oz pasta (fusilli or penne)
- 2 cups low-sodium chicken broth
- 2 tsp garlic powder
- 2 tsp Italian seasoning
- 1 cup freshly grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Prep your ingredients by chopping the sun-dried tomatoes and basil. Ensure the chicken is ready.
- Place the chicken breasts at the bottom of the Crock Pot. Layer with sun-dried tomatoes and sprinkle with garlic powder and Italian seasoning.
- In a bowl, mix softened cream cheese with chicken broth until smooth. Pour over the layered ingredients in the Crock Pot.
- Cover and cook on low for 6 hours or high for 3 hours until chicken shreds easily.
- About 30 minutes before serving, stir in uncooked pasta and chopped basil. Add more broth if necessary.
- Once cooked, shred the chicken in the pot and stir in grated Parmesan cheese until melted.
