  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup oil-packed sun-dried tomatoes, chopped
  • 1 cup fresh basil leaves, chopped
  • 8 oz cream cheese, softened
  • 8 oz pasta (fusilli or penne)
  • 2 cups low-sodium chicken broth
  • 2 tsp garlic powder
  • 2 tsp Italian seasoning
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping the sun-dried tomatoes and basil. Ensure the chicken is ready.
  2. Place the chicken breasts at the bottom of the Crock Pot. Layer with sun-dried tomatoes and sprinkle with garlic powder and Italian seasoning.
  3. In a bowl, mix softened cream cheese with chicken broth until smooth. Pour over the layered ingredients in the Crock Pot.
  4. Cover and cook on low for 6 hours or high for 3 hours until chicken shreds easily.
  5. About 30 minutes before serving, stir in uncooked pasta and chopped basil. Add more broth if necessary.
  6. Once cooked, shred the chicken in the pot and stir in grated Parmesan cheese until melted.
