Description

  • 2 cups fresh broccoli florets (chopped)
  • 1 cup sharp cheddar cheese (freshly grated)
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C). Wash and chop broccoli into small florets. Blanch in boiling water for 2-3 minutes, then transfer to ice water to cool.
  2. In a mixing bowl, combine blanched broccoli, cheddar cheese, panko breadcrumbs, eggs, garlic powder, salt, and pepper. Stir until just mixed.
  3. Form small balls or patties from the mixture and place on a parchment-lined baking sheet. Drizzle olive oil over each popper.
  4. Bake for 15-20 minutes or until golden brown and crispy. Serve warm with your favorite dipping sauce.
