Instructions
- Preheat oven to 400°F (200°C). Wash and chop broccoli into small florets. Blanch in boiling water for 2-3 minutes, then transfer to ice water to cool.
- In a mixing bowl, combine blanched broccoli, cheddar cheese, panko breadcrumbs, eggs, garlic powder, salt, and pepper. Stir until just mixed.
- Form small balls or patties from the mixture and place on a parchment-lined baking sheet. Drizzle olive oil over each popper.
- Bake for 15-20 minutes or until golden brown and crispy. Serve warm with your favorite dipping sauce.
