  • 6 egg roll wrappers
  • 2 green onions, finely chopped
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp Old Bay seasoning
  • Oil for frying (about 2 cups)

Instructions

  1. In a mixing bowl, combine crab meat, green onions, mayonnaise, Dijon mustard, and Old Bay seasoning. Mix well.
  2. Lay an egg roll wrapper on a clean surface with one corner facing you. Spoon about two tablespoons of filling onto the center.
  3. Fold the bottom corner over the filling tightly. Fold in each side and continue rolling until sealed; use water to seal edges if necessary.
  4. Heat oil in a deep skillet over medium-high heat until shimmering. Fry the egg rolls until golden brown on all sides (about 3-5 minutes).
  5. Drain excess oil on paper towels and serve hot with your favorite dipping sauce.
