Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup freshly grated Parmesan cheese
  • 4 garlic cloves, minced
  • 1 cup panko breadcrumbs
  • 2 eggs
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the chicken dry. Set up a breading station with three bowls: one for seasoned flour, one for beaten eggs, and one for panko mixed with Parmesan.
  3. Coat each chicken breast in flour, dip into the egg mixture, then press into the panko until fully coated.
  4. Heat olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes per side until golden brown.
  5. For the garlic sauce, melt butter in another pan, sauté minced garlic until fragrant, add more olive oil, and return cooked chicken to the pan.
  6. Transfer everything to the baking sheet and bake for 15-20 minutes until fully cooked (165°F internal temperature).
  7. Serve hot, garnished with parsley.
