- 3–4 boneless, skinless chicken breasts
- 1 cup freshly grated Parmesan cheese
- 4 garlic cloves, minced
- 1 cup panko breadcrumbs
- 2 eggs
- 1/4 cup olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the chicken dry. Set up a breading station with three bowls: one for seasoned flour, one for beaten eggs, and one for panko mixed with Parmesan.
- Coat each chicken breast in flour, dip into the egg mixture, then press into the panko until fully coated.
- Heat olive oil in a skillet over medium heat. Cook chicken for 4-5 minutes per side until golden brown.
- For the garlic sauce, melt butter in another pan, sauté minced garlic until fragrant, add more olive oil, and return cooked chicken to the pan.
- Transfer everything to the baking sheet and bake for 15-20 minutes until fully cooked (165°F internal temperature).
- Serve hot, garnished with parsley.
