  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup cremini or button mushrooms, chopped
  • 2 tbsp unsalted butter
  • 4 oz cream cheese, softened
  • 1 cup freshly grated Parmesan cheese
  • 1 cup fresh spinach (optional)
  • Salt and pepper to taste
  • Italian herbs to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Season chicken breasts with salt and pepper.
  3. In a skillet over medium heat, melt butter and sauté minced garlic until fragrant (about 30 seconds). Add chopped mushrooms and cook until golden brown.
  4. Stir in cream cheese until melted, then add half of the Parmesan cheese and spinach if desired. Let cool slightly.
  5. Create pockets in each chicken breast and stuff generously with the mushroom mixture.
  6. Place stuffed chicken in the baking dish and sprinkle remaining Parmesan on top.
  7. Bake for 25-30 minutes until internal temperature reaches 165°F (75°C). Rest for five minutes before slicing.
