Ingredients

  • 2 medium zucchinis
  • 1 pound lean ground turkey
  • 1 packet taco seasoning
  • 1 can black beans (rinsed)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro (for garnish)
  • Optional: sour cream or Greek yogurt

Instructions

  1. Preheat the oven to 375°F (190°C). Slice zucchinis in half lengthwise and scoop out the insides.
  2. In a skillet, brown the ground turkey over medium heat until fully cooked, breaking it apart as it cooks.
  3. Stir in the taco seasoning and black beans, simmering for 5 minutes to meld flavors.
  4. Fill each zucchini half with the turkey mixture, topping with shredded cheese.
  5. Place in a baking dish, cover with foil, and bake for 20 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
  6. Garnish with cilantro and serve with optional sour cream.
