Ingredients

  • 2 small Yukon Gold or red potatoes
  • 4 large fresh eggs
  • 1 yellow onion
  • 1 bell pepper (any color)
  • ½ cup shredded cheese (optional)
  • Salt & pepper to taste
  • 1 tablespoon olive oil or butter

Instructions

  1. Wash and dice the potatoes into small cubes. Chop the onions and bell peppers.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until softened.
  3. Add diced potatoes to the skillet, season with salt and pepper, and cook until golden brown (10-15 minutes).
  4. Whisk eggs in a bowl until light and frothy. Pour over the potato mixture in the skillet.
  5. Stir gently until eggs are set but still soft. If desired, add cheese on top before serving.
