- 2 small Yukon Gold or red potatoes
- 4 large fresh eggs
- 1 yellow onion
- 1 bell pepper (any color)
- ½ cup shredded cheese (optional)
- Salt & pepper to taste
- 1 tablespoon olive oil or butter
Instructions
- Wash and dice the potatoes into small cubes. Chop the onions and bell peppers.
- Heat olive oil in a large skillet over medium heat. Sauté onions and bell peppers until softened.
- Add diced potatoes to the skillet, season with salt and pepper, and cook until golden brown (10-15 minutes).
- Whisk eggs in a bowl until light and frothy. Pour over the potato mixture in the skillet.
- Stir gently until eggs are set but still soft. If desired, add cheese on top before serving.
