Description

Twice Baked Sweet Potatoes are a deliciously creamy and cheesy side dish that will elevate any meal. Easy to prepare, they are perfect for gatherings or cozy nights at home.


Ingredients

  • Medium-sized sweet potatoes
  • Unsalted butter
  • Full-fat sour cream
  • Sharp cheddar cheese
  • Ground cinnamon
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 400°F (200°C). Wash and dry the sweet potatoes.
  2. Place the sweet potatoes directly on the oven rack and bake for 45-60 minutes until tender.
  3. Let cool slightly, then slice in half lengthwise and scoop out most of the flesh into a bowl.
  4. Mix the scooped potato with butter, sour cream, half of the cheddar cheese, cinnamon, salt, and pepper until smooth.
  5. Refill potato skins with the mixture and top with remaining cheddar cheese.
  6. Return to the oven for 15-20 minutes until cheese is bubbly and golden.
