Ingredients
- Medium-sized sweet potatoes
- Unsalted butter
- Full-fat sour cream
- Sharp cheddar cheese
- Ground cinnamon
- Salt
- Pepper
Instructions
- Preheat the oven to 400°F (200°C). Wash and dry the sweet potatoes.
- Place the sweet potatoes directly on the oven rack and bake for 45-60 minutes until tender.
- Let cool slightly, then slice in half lengthwise and scoop out most of the flesh into a bowl.
- Mix the scooped potato with butter, sour cream, half of the cheddar cheese, cinnamon, salt, and pepper until smooth.
- Refill potato skins with the mixture and top with remaining cheddar cheese.
- Return to the oven for 15-20 minutes until cheese is bubbly and golden.
