- 1 medium cucumber, grated
- 1 cup full-fat Greek yogurt
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp fresh dill, chopped
- 2 garlic cloves, minced
- Salt and pepper to taste
- 4 cups mixed greens (arugula or spinach)
- 2 tbsp extra virgin olive oil
Instructions
- Preheat grill or skillet over medium-high heat. Season chicken breasts with salt and pepper. Grill until cooked through (165°F internal temp), about 6-7 minutes per side.
- Meanwhile, prepare tzatziki by mixing Greek yogurt, grated cucumber (squeeze out moisture), lemon juice, dill, garlic, salt, and pepper in a bowl.
- Once chicken is cooked, chop it into bite-sized pieces. Dice any additional veggies like bell peppers or cherry tomatoes if desired.
- In a large bowl, combine chicken pieces with mixed greens and veggies. Drizzle with olive oil and add tzatziki sauce. Toss gently to coat.
