- 1 cup cherry tomatoes, halved
- 8 oz fresh mozzarella balls
- 1 cup bell peppers, diced (mix of colors)
- 1 cup cucumber, diced
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- ¼ cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Cook pasta in salted boiling water until al dente (8-10 minutes). Drain and rinse under cold water.
- While pasta cools, chop cherry tomatoes, bell peppers, cucumber, and basil into bite-sized pieces.
- In a small bowl, whisk olive oil and balsamic vinegar; season with salt and pepper.
- In a large mixing bowl, combine cooled pasta, chopped veggies, and mozzarella. Pour dressing over the top and toss gently until well coated.
