Ingredients

  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella balls
  • 1 cup bell peppers, diced (mix of colors)
  • 1 cup cucumber, diced
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • ¼ cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente (8-10 minutes). Drain and rinse under cold water.
  2. While pasta cools, chop cherry tomatoes, bell peppers, cucumber, and basil into bite-sized pieces.
  3. In a small bowl, whisk olive oil and balsamic vinegar; season with salt and pepper.
  4. In a large mixing bowl, combine cooled pasta, chopped veggies, and mozzarella. Pour dressing over the top and toss gently until well coated.
