- 1 can (13.5 oz) full-fat coconut milk
- 1-inch piece fresh ginger, minced
- 4 garlic cloves, minced
- 1 cup bell peppers, chopped (mix of colors)
- 1 medium onion, finely chopped
- 1 scotch bonnet pepper, whole (adjust to taste)
- 2 tbsp lime juice
- ¼ cup fresh cilantro, chopped
Instructions
- Prep your ingredients: Cut chicken into bite-sized pieces. Chop onions, bell peppers, garlic, and ginger.
- Sauté aromatics: Heat oil in a large pot over medium heat. Add onions and cook until translucent.
- Add spices & chicken: Stir in garlic, ginger, and curry powder. Add chicken pieces and cook until browned.
- Pour coconut milk & simmer: Add coconut milk and scrape the bottom of the pot to deglaze. Bring to a gentle simmer.
- Incorporate vegetables & scotch bonnet: Add bell peppers and whole scotch bonnet pepper. Cook until chicken is tender.
- Finish with lime & cilantro: Squeeze lime juice over the curry before serving and garnish with cilantro.
