  • 1 lb boneless, skinless chicken thighs
  • 2 tbsp yellow curry powder
  • 1 can (13.5 oz) full-fat coconut milk
  • 1-inch piece fresh ginger, minced
  • 4 garlic cloves, minced
  • 1 cup bell peppers, chopped (mix of colors)
  • 1 medium onion, finely chopped
  • 1 scotch bonnet pepper, whole (adjust to taste)
  • 2 tbsp lime juice
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Prep your ingredients: Cut chicken into bite-sized pieces. Chop onions, bell peppers, garlic, and ginger.
  2. Sauté aromatics: Heat oil in a large pot over medium heat. Add onions and cook until translucent.
  3. Add spices & chicken: Stir in garlic, ginger, and curry powder. Add chicken pieces and cook until browned.
  4. Pour coconut milk & simmer: Add coconut milk and scrape the bottom of the pot to deglaze. Bring to a gentle simmer.
  5. Incorporate vegetables & scotch bonnet: Add bell peppers and whole scotch bonnet pepper. Cook until chicken is tender.
  6. Finish with lime & cilantro: Squeeze lime juice over the curry before serving and garnish with cilantro.
