Ingredients

  • 34 boneless, skinless chicken breasts
  • 1/4 cup extra virgin olive oil
  • 2 fresh lemons (zested and juiced)
  • 3 garlic cloves (minced)
  • 1 teaspoon dried oregano
  • 1 cup long-grain rice (basmati or jasmine)
  • 2 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Coat the chicken breasts and let marinate for at least 30 minutes.
  2. Heat olive oil in a skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until golden brown and cooked through (internal temperature of 165°F).
  3. Remove the chicken temporarily. Add rinsed rice to the skillet, stir well, then pour in chicken broth. Bring to a gentle boil.
  4. Return chicken to the skillet on top of the rice mixture. Squeeze fresh lemon juice over everything, cover with a lid, reduce heat, and simmer until liquid is absorbed (15-20 minutes).
  5. Let sit covered for an additional 5 minutes before fluffing the rice with a fork.
