- 3–4 boneless, skinless chicken breasts
- 1/4 cup extra virgin olive oil
- 2 fresh lemons (zested and juiced)
- 3 garlic cloves (minced)
- 1 teaspoon dried oregano
- 1 cup long-grain rice (basmati or jasmine)
- 2 cups chicken broth
- Salt and pepper to taste
Instructions
- In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and pepper. Coat the chicken breasts and let marinate for at least 30 minutes.
- Heat olive oil in a skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side until golden brown and cooked through (internal temperature of 165°F).
- Remove the chicken temporarily. Add rinsed rice to the skillet, stir well, then pour in chicken broth. Bring to a gentle boil.
- Return chicken to the skillet on top of the rice mixture. Squeeze fresh lemon juice over everything, cover with a lid, reduce heat, and simmer until liquid is absorbed (15-20 minutes).
- Let sit covered for an additional 5 minutes before fluffing the rice with a fork.
