  • 1 large egg
  • 1/2 cup milk

  • 1 cup powdered sugar (for filling)
  • Food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until light. Add the egg and vanilla, mixing well.
  4. Gradually mix in the dry ingredients alternating with the milk until combined.
  5. Drop rounded tablespoons of batter onto prepared sheets about two inches apart.
  6. Bake for 10–12 minutes until set. Allow cooling completely on wire racks before filling.
  7. For the filling, beat powdered sugar and softened butter until smooth; add milk and food coloring if desired.
  8. Spread or pipe filling on half of the cookies and sandwich them together.
