Ingredients

Scale
  • 1 cup long-grain white rice
  • 8 ounces fresh cremini or shiitake mushrooms, sliced
  • ½ cup low-sodium soy sauce
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 green onions, chopped
  • 1 tablespoon sesame oil

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a large pot over medium heat, add oil and sauté the minced garlic until fragrant (about 1 minute).
  3. Add sliced mushrooms and cook until tender and slightly browned.
  4. Pour in soy sauce and vegetable broth; bring to a gentle boil while stirring.
  5. Stir in the rinsed rice, cover, and reduce heat to low. Simmer for 18-20 minutes until liquid is absorbed.
  6. Remove from heat and let rest for 5 minutes before fluffing with a fork. Drizzle with sesame oil and top with chopped green onions before serving.
