  • 1 tsp coriander powder
  • ½ tsp turmeric powder

Instructions

  4. Add cumin, coriander, and turmeric; stir for about 30 seconds to release the spices' aromas.
  5. Introduce diced potatoes to the pan, followed by chopped spinach. Stir until spinach wilts (about 3 minutes).
  6. Pour in coconut milk and a splash of water; bring to a simmer. Cover and cook for 15-20 minutes until potatoes are tender.
