  • 1 pound large shrimp, peeled and deveined
  • 1 cup stone-ground corn grits
  • 2 cups water or broth
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • 2 tablespoons Cajun seasoning
  • 3 green onions, sliced
  • 3 garlic cloves, minced
  • Juice of 1 lemon
  • Salt to taste

Instructions

  1. In a pot, bring water or broth to a boil. Gradually whisk in grits, reduce heat, and cook, stirring frequently until thickened (about 20 minutes).
  2. Stir in heavy cream and butter until melted. Season with salt.
  3. In a skillet over medium-high heat, heat oil and sauté minced garlic briefly. Add shrimp seasoned with Cajun seasoning; cook until pink (3-4 minutes).
  4. Remove shrimp from skillet. In the same skillet, add lemon juice and additional seasoning; scrape up bits for flavor.
  5. Return shrimp to skillet with sauce, mix well, and let simmer for another minute.
  6. Spoon grits into bowls and top with shrimp mixture. Garnish with green onions.
