- 2 cups fresh broccoli florets
- 2 tbsp olive oil
- 3 tbsp low-sodium soy sauce
- 1 tsp garlic powder
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- 1. Marinate the Chicken: In a large bowl, combine olive oil, soy sauce, garlic powder, and lemon juice. Add chicken breasts and marinate for at least 30 minutes.
- 2. Prep the Broccoli: While the chicken marinates, wash and cut broccoli into bite-sized pieces. Toss with a drizzle of olive oil and a pinch of salt.
- 3. Preheat Your Grill: Heat your grill to around 400°F (200°C).
- 4. Grill the Chicken: Cook marinated chicken on the grill for about 6-8 minutes on each side until fully cooked.
- 5. Add Broccoli to Grill: During the last few minutes of grilling chicken, add broccoli to the grill for about 5 minutes until tender-crisp.
- 6. Assemble Your Bowls: Slice grilled chicken into strips and serve over broccoli. Drizzle with leftover marinade if desired.
