  • 8 oz spaghetti or linguine
  • 1 lb large peeled shrimp
  • 3 cloves garlic, minced
  • 1 cup full-fat coconut milk
  • 1 cup bell peppers, diced (any color)
  • ¼ cup fresh cilantro or parsley, chopped
  • ½ tsp red pepper flakes
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Gather all ingredients on a clean countertop; chop bell peppers and mince garlic.
  2. Boil salted water in a large pot. Cook spaghetti or linguine according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, add olive oil and sauté bell peppers and garlic until softened (about 3 minutes).
  4. Add shrimp to the skillet; cook until pink and opaque (2-3 minutes per side).
  5. Pour in coconut milk, lime juice, and red pepper flakes. Stir well and let simmer for about 5 minutes to thicken.
  6. Toss cooked pasta and fresh herbs into the skillet; mix thoroughly until coated in sauce.
