Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 tbsp fresh dill, chopped
  • Salt and pepper to taste
  • 4 cups mixed greens (spinach, arugula, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced

Instructions

  1. In a medium bowl, whisk together olive oil, lemon juice, dill, salt, and pepper.
  2. Place salmon fillets in a shallow dish and pour marinade over them. Let marinate for at least 30 minutes.
  3. Preheat oven to 400°F (200°C).
  4. Bake marinated salmon on a lined baking sheet skin-side down for 12-15 minutes until flaky.
  5. While salmon bakes, toss mixed greens with cherry tomatoes and cucumber in a large bowl. Drizzle with olive oil and lemon juice; season with salt and pepper.
  6. Plate the baked salmon on top of the salad and garnish with extra dill if desired.
