- 1 cup brown rice
- 1 cup assorted bell peppers, diced
- 1 cup corn (fresh or frozen)

Instructions
- Rinse brown rice under cold water until clear to remove excess starch.
- In a saucepan, bring 2 cups of water to boil. Add brown rice and a pinch of salt. Cover and simmer for 40-45 minutes until tender.
- In a skillet over medium heat, add olive oil. Sauté seasoned shrimp for about 3-4 minutes per side until pink and opaque.
- Add bell peppers and corn; sauté for another 5 minutes until peppers soften.
- Mix in salsa and lime juice; stir well.
- Assemble bowls by layering brown rice, shrimp mixture, topped with avocado and cilantro.
