Instructions
- Prepare the cherry compote by cooking pitted cherries with 1/4 cup sugar in a saucepan over medium heat until soft. Let cool.
- In a mixing bowl, combine mascarpone cheese, 1/2 cup sugar, and vanilla extract until smooth.
- Gently fold in whipped heavy cream until well combined.
- Dip each ladyfinger quickly in amaretto and layer them in a serving dish.
- Spread half of the mascarpone mixture over the ladyfingers, followed by half of the cherry compote. Repeat layers.
- Chill for at least 4 hours or overnight. Before serving, dust with cocoa powder and garnish with fresh cherries.
