  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1/2 cup amaretto liqueur
  • 1 cup fresh cherries (pitted and halved)
  • 12 ladyfingers
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Prepare the cherry compote by cooking pitted cherries with 1/4 cup sugar in a saucepan over medium heat until soft. Let cool.
  2. In a mixing bowl, combine mascarpone cheese, 1/2 cup sugar, and vanilla extract until smooth.
  3. Gently fold in whipped heavy cream until well combined.
  4. Dip each ladyfinger quickly in amaretto and layer them in a serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the cherry compote. Repeat layers.
  6. Chill for at least 4 hours or overnight. Before serving, dust with cocoa powder and garnish with fresh cherries.
