  • 1 cup heavy cream
  • ¾ cup granulated sugar
  • 4 large egg yolks
  • 2 tsp vanilla extract
  • ½ tsp freshly grated nutmeg
  • 2 tbsp cornstarch mixed with 2 tbsp cold water

Instructions

  1. In a medium saucepan, heat whole milk and heavy cream over medium heat until steaming (do not boil). Stir occasionally.
  2. Whisk in granulated sugar and nutmeg until dissolved.
  3. In a separate bowl, whisk egg yolks until pale and fluffy. Gradually add hot milk mixture to yolks, whisking constantly to temper.
  4. Return the yolk mixture to the saucepan and cook on low heat, stirring continuously until thickened enough to coat the back of a spoon.
  5. Remove from heat; stir in vanilla extract and cornstarch mixture.
  6. Transfer pudding into serving dishes; cover with plastic wrap pressed against the surface to prevent skin formation. Chill for at least two hours before serving.
