  • 3 cloves fresh garlic, minced

  • 2 medium carrots, diced
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes (oil-packed)
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 tsp dried Italian herbs (oregano and basil)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, warm the olive oil. Add chopped onions and minced garlic; sauté until translucent and fragrant.
  2. Stir in diced carrots and cook until slightly softened. Add diced chicken breasts, seasoning with salt and pepper until cooked through.
