  • 1/4 cup granulated sugar

  • 6 oz dark chocolate (70% cocoa content), chopped
  • 1/2 cup heavy cream
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine flour, cocoa powder, granulated sugar, and sea salt. Cut in cold butter until the mixture resembles coarse crumbs.
  2. Press the dough into a 9-inch tart pan evenly along the bottom and sides. Prick with a fork to prevent puffing during baking.
  3. Bake for 15-20 minutes until set but not browned. Let cool slightly.
  4. In a heatproof bowl, place chopped dark chocolate. Heat heavy cream until simmering; pour over chocolate and let sit for 5 minutes before stirring until smooth.
  5. Add eggs one at a time, whisking well after each addition along with vanilla extract.
  6. Pour filling into the cooled tart shell; bake for another 15-20 minutes until slightly set but still jiggly in the center. Cool completely before serving.
