  • 1/2 cup heavy cream (cold)
  • 1/2 cup powdered sugar (sifted)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 15×10-inch jelly roll pan with parchment paper.
  2. In a mixing bowl, whisk together flour, cocoa powder, granulated sugar, baking powder, and salt until combined.
  3. In another bowl, beat eggs until frothy and mix in melted butter and vanilla extract. Combine with dry ingredients; stir until just mixed.
  4. Pour batter into the prepared pan and spread evenly. Bake for 12-15 minutes until a toothpick comes out clean.
  5. Cool for five minutes, then invert onto a powdered sugar-dusted kitchen towel and roll gently.
  6. For the filling, whip heavy cream until soft peaks form, then fold in peanut butter and powdered sugar until smooth.
  7. Spread filling over cooled cake layer, roll tightly using the towel for support, and place seam side down on a platter.
