- 3 large eggs (room temperature)

- Incorporate eggs one at a time, mixing gently to avoid overmixing.
- Fold in chopped pistachios and half of the raspberries into the filling.
- Pour filling onto cooled crust and arrange remaining raspberries on top. Bake for 50-60 minutes or until edges are set but center is slightly wobbly.
