  • 1 ½ cups graham cracker crumbs
  • ½ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¼ cup sour cream
  • 2 tsp vanilla extract
  • 3 large eggs, room temperature

Instructions

  1. Preheat the oven to 325°F (160°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until moistened. Press firmly into the bottom of the pan.
  3. Bake the crust for about 10 minutes or until lightly golden brown.
  4. In another bowl, beat softened cream cheese with sugar until smooth. Add sour cream and vanilla extract; mix well.
  5. Slowly add eggs one at a time while mixing gently until combined.
  6. Pour the cheesecake mixture over the baked crust and return to the oven for 25-30 minutes or until set around edges but slightly jiggly in the center.
