- 2 lbs Russet potatoes, peeled and sliced into 1/8-inch rounds
- 1 cup heavy cream
- 2 cups sharp cheddar cheese, shredded
- 1 medium sweet onion, finely chopped
- 4 tbsp unsalted butter
- 1 tsp salt
- 1/2 tsp black pepper
- Fresh herbs (like thyme or chives), for garnish
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish with butter or cooking spray.
- In a skillet over medium heat, melt butter and sauté onions until translucent (about 5 minutes).
- In a bowl, mix heavy cream with salt, pepper, and half of the shredded cheddar cheese.
- Layer half of the sliced potatoes in the baking dish, pour half of the creamy mixture over them, and top with half the sautéed onions. Repeat layers and finish with remaining cheddar cheese.
- Cover with aluminum foil and bake for 45 minutes. Remove foil and bake an additional 15–20 minutes until golden brown.
