  • ⅓ cup honey or maple syrup
  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh berries (blueberries or raspberries)
  • ½ tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a mixing bowl, combine rolled oats, melted butter, honey or maple syrup, baking powder, and salt. Stir until mixture resembles damp sand.
  3. Press the oat mixture firmly into the prepared baking dish to form an even layer.
  4. In another bowl, beat the softened cream cheese until smooth. Add eggs and vanilla extract; mix until creamy.
  5. Gently fold in fresh berries into the cheesecake mixture.
  6. Pour the cheesecake filling over the oat base and spread evenly.
  7. Bake for 25–30 minutes until set but slightly jiggly in the center. Cool completely before slicing into bars.
