  • 2 cups shredded rotisserie chicken
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese (softened)
  • 1 cup cheddar cheese (shredded)
  • 2 green onions (chopped)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds to create bowls.
  3. In a mixing bowl, combine shredded chicken, buffalo sauce, cream cheese, garlic powder (to taste), and half of the cheddar cheese until smooth.
  4. Fill each pepper generously with the buffalo chicken mixture.
  5. Top with remaining cheddar cheese.
  6. Place in a baking dish covered with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
