Instructions
- Preheat oven to 350°F (175°C). Grease two 9-inch round cake pans and dust with flour.
- In a large bowl, whisk together flour, sugars, spices, baking soda, baking powder, and salt until combined.
- In another bowl, mix oil and eggs until well combined. Stir in grated carrots.
- Gradually add dry ingredients to wet mixture, stirring gently until just combined.
- Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
- Cool cakes in pans for about 10 minutes before transferring to wire racks to cool completely.
- To make frosting, beat softened cream cheese with powdered sugar and vanilla until smooth.
