- 1 lb ground beef or turkey
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 2 tbsp taco seasoning
- 1 cup canned black beans, drained and rinsed
- ½ cup sour cream (for dipping)
- 2 tbsp cooking oil
Instructions
- Preheat your oven to 400°F (200°C).
- In a skillet over medium heat, brown the ground meat until no longer pink. Drain excess fat and stir in taco seasoning and black beans. Cook until fragrant.
- Lay each tortilla flat; spoon the cheesy mixture into the center and roll tightly. Brush edges with water to seal.
- Place on a parchment-lined baking sheet and brush with oil. Bake for 15-20 minutes until golden brown.
- Let cool slightly, slice into bite-sized pieces, and serve with sour cream.
