  • 8 oz fusilli pasta
  • 6 oz thick-cut bacon, chopped
  • 1 cup sharp cheddar cheese, shredded
  • 4 oz cream cheese, softened
  • 1 tsp garlic powder
  • 1 cup whole milk
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1/2 cup reserved pasta water (optional)

Instructions

  1. Cook the fusilli pasta in salted boiling water until al dente. Reserve 1/2 cup of pasta water before draining.
  2. In a skillet over medium heat, cook the chopped bacon until crispy. Drain on paper towels.
  3. In the same skillet, melt butter over medium heat, whisk in flour until golden, then gradually add milk while stirring until thickened.
  4. Stir in cream cheese and cheddar cheese until melted and creamy. If needed, mix in reserved pasta water for desired consistency.
  5. Gently fold cooked fusilli into the cheese sauce along with crispy bacon and garlic powder.
  6. Transfer to a greased baking dish, top with extra cheddar, and bake at 375°F for about 20 minutes or until bubbly and golden.
