  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz penne pasta
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 cup fresh asparagus, chopped
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Boil salted water in a large pot. Add penne pasta and cook according to package instructions until al dente, about 10-12 minutes. Drain.
  2. Heat olive oil in a large skillet over medium heat. Add diced chicken breasts and cook until golden brown and no longer pink inside, about 6-8 minutes.
  3. Stir in minced garlic; cook for 30 seconds until fragrant. Then add sliced mushrooms and chopped asparagus, cooking until softened (4-5 minutes).
  4. Pour in heavy cream while scraping up bits from the pan's bottom. Stir in grated Parmesan cheese until melted and smooth (2-3 minutes).
  5. Add drained penne to the skillet, gently folding everything together until well-coated (1-2 minutes). Serve hot with additional Parmesan if desired.
