  • 4 boneless, skinless chicken breasts (approx. 1.5 lbs)
  • 1 cup fresh pineapple juice
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup light brown sugar
  • 4 garlic cloves, minced
  • 1 tsp ground ginger
  • 2 tbsp lime juice
  • 1 tbsp sesame oil
  • 2 green onions, chopped
  • Pineapple slices (optional)

Instructions

  1. In a mixing bowl, combine pineapple juice, soy sauce, brown sugar, minced garlic, ground ginger, lime juice, and sesame oil. Stir until sugar dissolves.
  2. Place chicken breasts in a resealable bag and pour the marinade over them. Seal tightly and refrigerate for at least 30 minutes.
  3. Preheat your grill to medium-high heat (375°F). Lightly oil the grates to prevent sticking.
  4. Remove chicken from marinade (discard leftover marinade) and grill for 6-7 minutes per side until internal temperature reaches 165°F.
  5. If using pineapple slices, grill them during the last few minutes until caramelized.
  6. Let the chicken rest for 5 minutes before slicing and serve topped with grilled pineapple and green onions.
