  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar (divided)
  • 3 large eggs, room temperature
  • 16 oz cream cheese, softened
  • 1 cup eggnog
  • ¼ tsp nutmeg (freshly grated)
  • ½ tsp cinnamon
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, ¼ cup of sugar, and melted butter until crumbly. Press into the bottom of a springform pan.
  3. Bake the crust for about 10 minutes until golden brown; cool.
  4. Beat cream cheese until smooth in a large bowl. Gradually add the remaining sugar and mix well.
  5. Add eggs one at a time, then blend in eggnog, vanilla extract, nutmeg, and cinnamon until smooth.
  6. Pour filling over the cooled crust and bake for around 60 minutes or until slightly jiggly in the center.
  7. Cool in the oven with the door ajar for an hour before refrigerating overnight.
