  • 3 cups fresh baby spinach
  • 1 cup button mushrooms, sliced
  • 4 cloves garlic, minced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by rinsing the spinach and patting it dry. Slice the mushrooms and mince the garlic.
  2. In a large skillet over medium-high heat, heat the olive oil until shimmering. Season the salmon fillets with salt and pepper, placing them skin-side down in the skillet. Sear for about 4-5 minutes until golden brown.
  3. Carefully flip the salmon using a spatula. Add the minced garlic and sliced mushrooms around the salmon. Cook until the mushrooms soften, about 3 minutes.
  4. Fold in fresh spinach and add butter until melted. Sauté until the spinach wilts, approximately 2 minutes.
  5. Squeeze fresh lemon juice over everything while still on heat. Plate immediately while warm.
