  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 lb baby potatoes, halved
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 3 tbsp extra virgin olive oil
  • 2 tsp dried Italian herbs
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp lemon juice
  • Fresh parsley for garnish (optional)

Instructions

  2. In a bowl, toss halved baby potatoes with olive oil, salt, pepper, and half the herbs.

  5. Bake for 35-40 minutes until golden brown and cooked through.
