- 1 lb boneless, skinless chicken breasts (about 3–4 pieces)
- 1/4 cup fresh lemon juice (about 2 lemons)
- 2 tbsp extra virgin olive oil
- 2 tsp dried oregano
- 3 garlic cloves, minced
- Salt and pepper to taste
- Pita bread for serving
- 1 cup full-fat Greek yogurt
- 1/2 cup cucumber, grated
- 1 tbsp fresh dill or mint, chopped
- Zest of 1 lemon
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions
- Cube the chicken breasts and combine lemon juice, olive oil, oregano, garlic, salt, and pepper in a bowl. Add the chicken cubes and toss until coated. Marinate in the refrigerator for at least 30 minutes.
- If using wooden skewers, soak them in water. Thread marinated chicken onto skewers with space between each piece.
- Heat your grill or grill pan over medium-high heat and lightly brush with olive oil.
- Cook the skewers for about 10-12 minutes, turning occasionally until golden brown and cooked through.
- In a bowl, mix Greek yogurt with grated cucumber, dill or mint, lemon zest, minced garlic, salt, and pepper until well combined.
