  • 1 lb boneless, skinless chicken breasts (about 34 pieces)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • 2 tbsp extra virgin olive oil
  • 2 tsp dried oregano
  • 3 garlic cloves, minced
  • Salt and pepper to taste
  • Pita bread for serving
  • 1 cup full-fat Greek yogurt
  • 1/2 cup cucumber, grated
  • 1 tbsp fresh dill or mint, chopped
  • Zest of 1 lemon
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Cube the chicken breasts and combine lemon juice, olive oil, oregano, garlic, salt, and pepper in a bowl. Add the chicken cubes and toss until coated. Marinate in the refrigerator for at least 30 minutes.
  2. If using wooden skewers, soak them in water. Thread marinated chicken onto skewers with space between each piece.
  3. Heat your grill or grill pan over medium-high heat and lightly brush with olive oil.
  4. Cook the skewers for about 10-12 minutes, turning occasionally until golden brown and cooked through.
  5. In a bowl, mix Greek yogurt with grated cucumber, dill or mint, lemon zest, minced garlic, salt, and pepper until well combined.
  6. Enjoy hot skewers alongside warm pita bread and tzatziki sauce.
