  • 1 bay leaf

Instructions

  2. Add the ham hock and cook for an additional minute.
  3. Stir in soaked black-eyed peas and chicken broth; bring to a boil while stirring gently.
  4. Season with thyme, cayenne pepper, bay leaf, salt, and pepper. Reduce heat and let simmer for about 45 minutes until peas are tender.
  5. Remove the ham hock; shred any meat back into the soup and discard bones.
