- 1 cup dry red wine
- 2 tbsp tomato paste
- 1 cinnamon stick
- 2 bay leaves
- 2 tbsp extra virgin olive oil
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- Set your Instant Pot to sauté mode and heat olive oil. Add sliced onions and cook until soft (4-5 minutes).
- Brown cubed beef chuck roast in batches (6-8 minutes per batch) until evenly browned.
- Stir in minced garlic and tomato paste; cook for 1 minute until fragrant.
- Pour in red wine, scraping up any browned bits from the pot's bottom. Add cinnamon stick, bay leaves, salt, and pepper; stir well.
- Mix in pearl onions and secure the lid on the Instant Pot. Cook on high pressure for 35 minutes.
- Allow natural pressure release for 10 minutes before manually releasing any remaining steam. Discard cinnamon stick and bay leaves before serving.
