- 4 cloves fresh garlic, minced
- 8 oz cream cheese (226g)
- 1 cup low-sodium chicken broth (240ml)
- 8 oz fettuccine pasta (226g)
- 2 cups fresh spinach (60g)
- ½ cup grated Parmesan cheese (50g)
- 2 tsp Italian seasoning
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then sear until golden brown on both sides, about 6-8 minutes.
- Remove chicken from the skillet. Add minced garlic to the same pan and sauté for about 30 seconds. Stir in fresh spinach until wilted.
- Lower heat and add cream cheese and chicken broth to the skillet. Stir continuously until smooth and creamy.
