- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1/2 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 cup fresh celery, chopped
- 1 cup red grapes, halved
- 1/4 cup green onions, sliced
- Salt and pepper to taste
- 12 slider buns
Instructions
- Boil water in a large pot. Add chicken breasts seasoned with salt. Cook until the internal temperature reaches 165°F (74°C), about 15-20 minutes.
- In a bowl, mix together mayonnaise and Dijon mustard until smooth.
- Once cooled, shred the chicken and chop the celery, grapes, and green onions into bite-sized pieces.
- Combine shredded chicken with the dressing mixture and chopped veggies. Stir gently to combine.
- Slice slider buns in half and spoon generous amounts of chicken salad onto each bottom half. Top with the other half of the bun.
