  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1/2 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 1 cup fresh celery, chopped
  • 1 cup red grapes, halved
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste
  • 12 slider buns

Instructions

  1. Boil water in a large pot. Add chicken breasts seasoned with salt. Cook until the internal temperature reaches 165°F (74°C), about 15-20 minutes.
  2. In a bowl, mix together mayonnaise and Dijon mustard until smooth.
  3. Once cooled, shred the chicken and chop the celery, grapes, and green onions into bite-sized pieces.
  4. Combine shredded chicken with the dressing mixture and chopped veggies. Stir gently to combine.
  5. Slice slider buns in half and spoon generous amounts of chicken salad onto each bottom half. Top with the other half of the bun.
